This simple, one-pot bean soup is loaded with flavor and vegetables and comes together in under 30 minutes (though you can simmer longer to further enhance and develop the flavors). The Italian sausage and fire-roasted tomatoes do the heavy lifting in the flavor department, while the beans add a certain creaminess to the overall texture. The remaining vegetables add color, fiber, and that overall good feeling we're sneaking in our daily dose of the "green stuff..."
COOKIE OF THE MONTH
Mmmmm! The classic peanut butter cookie with its iconic crisscross pattern. It was a staple in many homes while we were growing up with its crispy, melt-in-your-mouth texture, and all that sparkly sugar coating one's fingertips and lips while being eaten. Yeah, the humble pb cookie is definitely a favorite, and a recipe worth dusting off and re-making again if you haven't in a while. I would venture to guess...
