Many years ago, when I was working in downtown Denver, there was a magical sandwich shop called Spicy Pickle and, if I remember correctly, most, if not all, of their menu was various panini sandwiches. They made "cheese-pulls" popular before cheese-pulls were even a thing! Turkey, roast beef, ham, Italian...there were so many ooey-gooey cheesy panini combinations to choose from, but my very favorite was the humble Roma. Basil mayo, fresh mozzarella, and Roma tomato slices were the only ingredients... 

COOKIE OF THE MONTH

If I could rename these melt-in-your-mouth little bites, I would call them Pie Crust Cookies. The wafers have that light, flaky taste and texture you'd find from a homemade pie crust, while the sprinkle of sugar gives them a slight sweetness and crunch that will have you popping at least a dozen, if not more, in your mouth after removing them from the oven. Seriously, be prepared to be massively tempted and your cookie yield diminished before you even whip up the silky smooth buttercream...
